'Eataly' Learning To Cook Vegetarian

As many of you know I am vegetarian and have been for almost a year now. One of the positives I saw in taking up vegetarianism was a healthier lifestyle where I knew I would create an environment where I would be conscious of what I ate on a daily basis. This step would make be take accountability in my decisions and create a new responsibility of finding ways to nourish myself fully without meat. I knew this would sometimes mean making my own dinners as I recognize to others it seems as a disadvantage. WIht summer coming I knew I would have more time to experiment with ideas and I decided a cookbook was a good place to start. I also wanted to embrace where I was living as I have never cooked a fully Italian meal, so I thought that Eataly's Contemporary Italian Cooking would be a great place to start. I will be trying to integrate both of these topics in the meal I will be making!! In the video below I will be creating my own recipe for the summer and act like I am hosting my own cooking show. The recipe for my yummy dish is below (but the video is pretty great).

After finishing this little competition I had with myself I finally realized how tedious cooking really can be when you are left to do it all by yourself. When I mentioned making a simple meal, it really did turn out as so (I even added a little pesto sauce to add a little more excitement), and I was very disappointed as it took me a really long time to prepare the vegetables. I know that I am not really a fan of cooking for myself, and I usually help my mom with a few bits here and there but I have never made a full dinner past preparing a salad and pasta for my family. It made me really appreciative to my mom who cooks every night without any help. I think reflecting back on this experience it will push me to get into the kitchen more and go out of my comfort zone even if it proves not to be the most fun of activities. I am usually one to bake with sweets and in the video, you can even see a little treat I made for myself earlier, but I am very glad that I tried something new, and my entire family said that I did a very good job. All in all, it ended up being very rewarding!
